Will the 'standard' 18" winter wheel set ( Porsche OEM Part# 982-044-600-02) for the 718 fit a Cayman S given the larger brakes than the base model or do I need to go with the 19" set?

If you’re talking about these, yes. Currently fitted with no issue. Also, at least some dealerships will store your summer wheels and tires at no cost to you. They were on sale at suncoast a while back. Not sure if they still are or not. My dealer price matched saving me the shipping.

I'm more curious about the base 18 inch cayman wheels and not the 18 winters.
The base cayman wheel is not a bad looking wheel, especially if powdercoated satin black.

Do the 18” fit a CGTS or would I go for the 19” winter wheel sets

Yes they do. I have a standard 18" winter set on the GTS. Plenty of space around the calipers.
