Anyone with a Boxster or Cayman T able to help with how to configure the settings for Individual mode, accessed through the little sub-dial on the steering wheel? I put it in Individual mode but no settings show up on the dash or infotainment screen.

I'm coming from BMW where this is all pretty intuitive through menus on the infotainment screen.

This is exactly what I'm looking for! How do I access this menu? When I toggle through the Multifunction Display menus using the button on the steering wheel, I don't get the menu with "Individual" in it.
Sounds like you need to spend some time with Good to Know. Best of Luck:

This confused me too at first. Pressing the right steering wheel navigation "ball" will move you into the menus. Do this while on the default page (maybe any page). Here are some photos, observe my right thumb

The manual and good to know app don't do much to help understand the difference between the multifunction display, the small roundish screen immediately to the right of the Tach, and the PCCM's screen.

The small roundish screen immediately to the right of the Tach IS the multifunction display (MFD). Looks like you’re there now 👍
