Agree with others. Ditch the buckets as they are more suited to a GT car. A GTS is more of a performance Grand Tourer. Personally I’d swap the red GTS package for chalk/crayon if you really must have it. Also agree to ditch the gloss black on the exterior as it will show every swirl mark known to man and not cheap to replace when the time comes.

You definitely need to try the seats. Everyone is different. I find the leather seats to be too hard yet the Race-Tex is super comfortable.

I went for standard interior on my GTS but with extended leather. For me the carbon and contrast stitching wasn't worth the extra £

Those colours are flat. Don’t think there is any difference is longevity as modern paints go through quite a testing process and neither are single stage.
Buy the colour you like. There are no bad choices when it comes to paint.

So I have a Aventurine Green Metallic coming soon - Would you say a Ceramic coating brings out the "Green" a bit more than without? I also know certain protection films have either matte or glossy finish - so I assume for a color like Aventurine that's got a almost grey like look, the glossy finish might be better versus a matte finish that could possibly mute the Green a bit?
I too have AG and a good quality ceramic coating will enhance the metallic flake in the paint. I also have gloss PPF and can't notice the difference in a PPF'd panel and a non-PPF'd panel. A matte PPF will change the finish and you may not get the metallic flake
